(375 ml) Sauvignon Blanc 2019

Production

The grapes for this Sauvignon Blanc come from three different blocks at Boxwood Estate vineyards.  2019 was an excellent vintage, dominated by warm sunny weather.  These grapes were hand-picked from August 30th through September 4th.  They were delivered straight to the winery where they were chilled, whole-cluster pressed directly to stainless-steel tanks and the juice settled.  Fruit from different vineyard blocks and also different clones were fermented separately to explore what each had to offer.  To capture the natural aromas of the grapes and to retain its fresh flavors, all wine lots were fermented cool, at 53-55°F.  The wine was then aged in tank on the lees to accentuate the richness in the mid-palate which achieves a balance with the natural acidity of the wine.  Sauvignon Gris is a complimentary blender for Sauvignon Blanc, often used as such in Bordeaux, as it brings a richness and fullness to the palate to work with the acidity and to meld with the aromas of the Sauvignon Blanc.
