Tasting notes

Wine

This multi-layered wine starts with a trace of flint or gunpowder on the nose along with elements of lemon and lime.  On the palate one may sense a bit of lemon cream, sage, citrus and pineapple.  This wine has good weight and delivers a fresh, mouth-watering acidity making the wine a fine food accompaniment as well.  This fullness of flavor lingers into a long, fresh and enjoyable finish.

Production notes

Production

We are happy to report another fine growing season in 2021:  warm temperatures, plenty of sunshine, and September storms holding off until the grapes were picked.  We conducted multiple fermentations based on different clones and/or location in the vineyard.  Every year provides its own differences:  the 2021 Sauvignon Blanc was picked earlier and in a shorter time-frame than in 2020 (5 days from August 30th to September 3rd vs. 14 days in 2020 from September 4th to 17th).  Oh the beauty of vintage influenced wines!

Hand-picked and delivered straight to the winery, the grapes were chilled overnight, whole-cluster pressed, and the cold juice settled. All wine lots were fermented at cool temperatures of 55-59°F.  This is done to help retain the natural aromas of the grapes and its fresh flavors.  The young wines were then left to develop in tank with the yeast lees (sediment).  The lees were occasionally stirred with the wine to improve the body or weight, accentuate the richness of the mid-palate and enhance the aromatic potential.  Springtime meant pulling samples from the different fermentations to evaluate and assemble into this 2021 Sauvignon Blanc blend.  One main difference in this wine vs. earlier vintages is that it has no Sauvignon Gris blended with it … it is 100% Sauvignon Blanc.  The wine was bottled in April 2022.

Seafood of any kind will be delicious, raw oysters being our favorite. We also love to balance heavy, creamy, or cheese sauces with Sauvignon Blanc’s bright acidity.
